A Burst of Spontaneity

So I NEVER do this, but I decided last minute to take this week off of work and go to Philadelphia with C for the closing on the apartment! Then I'll spend two days at his house in New York, and then it's off to Quebec to celebrate America's birth!

My boss doesn't mind if I take work off, even if it's last minute. My office is really laid back and the summers are slow. So that's not really a factor at all. The only factor for me was the money issue. But I am taking two days off for the fourth anyway, so why not make it five? lol. Right....

You're only young with the ability to jet off for a week at a time once right?! Right.

This begins my week long hiatus, but I'll certainly keep you all posted via mobile blogging if anything newsworthy happens!! Have a safe and wonderful holiday!!!!

30 Day Shred Begins!

So I started Jillian Michaels' 30 Day Shred last night, and let's just say it's AWESOME! Totally kicked my ass, which is exactly what I'm looking for. Jillian is super intense and motivational throughout the whole workout, which is helpful for those times when you just want to stop and rest.

My friends from college are planning a trip to Seaside Heights in late July, so this is the perfect time to start for me! Gotta look good in that bikini ;)

Fourth of July plans!!!!

Fourth of July is definitely one of my favorite holidays. Ok, maybe I just say that about any holiday that involves parties and a color scheme. Whatever. But this year is going to be super special! C and I are going up to Mont Tremblant with his family!! I know what you're thinking, Tremblant is in CANADA! How unpatriotic! I said the same thing, but it's nice to shake things up once in a while isn't it?

I'm not sure what it will be like there in the summer. We usually just go there to ski, so this will be an exciting adventure for me. I am pretty C has already planned hiking, biking and a high ropes course for us. But I'll be boycotting the high ropes course. NOT my style!

Has anyone spent any time up at Tremblant? It's SO gorgeous and there's always somethign fun to do. Weeeee I cannot WAIT :)

Gin & Tonic Cupcakes!

C's mom's birthday is next week (July 4th actually!) so I will be making these yummy and adorable cupcakes for her. Good thing my baking skills are a lot better than my cooking skills! :X

Ingredients

Cake
2 medium egg whites
Pinch of sea salt
1/4 teaspoon cream of tartar
1/2 cup confectioner's sugar, sifted
1/4 cup flour
1 1/2 tablespoons tonic water

Frosting
1/2 cup mascarpone
1 tablespoon gin
2 tablespoons corn syrup
Green food coloring
Lime slices covered in sugar or jellied lime or lemon slices, for garnish

Directions
1. Preheat the oven to 325° Fahrenheit. With an electric hand mixer, beat the egg whites in a large bowl with salt and cream of tartar until they are risen. Now beat in the sugar, a couple of tablespoons at a time, sprinkling it over the egg whites and beating about 20 seconds with each addition. Fold the sifted flour into the meringue in three stages, and then stir in the tonic water.

2. Arrange muffin paper baking cups inside a muffin tin and fill two thirds full. Bake for 15-20 minutes until lightly golden on the surface and still springy to the touch. Remove and let cool

3. Spoon mascarpone into a bowl and beat in the gin and then the syrup and tint it the palest green with a little food coloring. Fill an icing bag or ziploc with the tip cut off to frost the cupcakes.

4. Use a decorative toothpick to spear lime slices in sugar or jellied candies and insert one into each cupcake.

Makes 12 cupcakes.

Happy Father's Day!

I hope you have a wonderful day with all the Dads in your life! I am home in Massachusetts visiting my parents today. We're making a yummy dinner and relaxing all day and night. My dad and I love watching movies together, so that will most likely be our plan for the evening! I guess I'll let him pick the movie since it is his special day and all....

I'm in a Wonderful Mood!!!

Do you ever have one of those days when you just feel truly blessed? Overall I'm sure we all feel blessed in one way or another, but do you ever have a day when you just feel like your life could not be more perfect? I'm having one of those days today and I just wanted to share my good feelings with all of you! Take time to look around and appreciate all the beautiful small things in your life. If you really stop to consider it, I bet you'll find you have more to be thankful for than you thought!!

Horray for Outlet Shopping

Yesterday I went to the Wrentham Outlets with C. We bought a Krups coffee maker for our new apartment. The Krups FMF5. How lovely to be dating someone as addicted to coffee as I am! By the way, C's parents' offer was accepted on the Bryn Mawr apartment, so we'll be moving there in late August! Yayyy..



I also bought an adorable apron and potholder set at Williams Sonoma. Pink and green of course. Must get the apron monogrammed ASAP :)

I. Am. Obsessed.

Lately I've been TOTALLY obsessed with Gossip Girl! A friend recently let me borrow season one on DVD, and I was hooked by the second episode. My advice? Get into it!

As an aside, I tried to make Enchiladas this week for C and I. Not so tasty. Some day I'll aquire the skills necessary to be the domestic godess I know I'm destined to be. Some day........
